Because:
-it is very well documented
http://developer.symbian.org/main/documentation/index.php;
-it looks very fast  and well suited for freerunner
http://developer.symbian.org/wiki/index.php/Symbian_OS_Internals/1._Introducing_EKA2#Design_goals;
-a new, very active and wide community is rising and joining/merging may
be very fruitful;
-a lot of software with source code (indeed compilable for freerunner)
seems to exist.

and, of course, because it can be done.
