Yes that would be possible. You just need to repartition your flash
memory and fix the u-boot environment to correctly extract kernel and
rootfs from it.

However in GTA01 the flash memory is quite small for two operating
systems. But you can go a different route which also saves you from the
hassle of repartition the flash memory:

Install qtopia on the flash as usual and put openmoko rootfs (and
kernel) on a SDmicro card and boot that. INstructions on how to boot
from SD are in the wiki.
