FWIW I'm going through almost exactly the same experiment (on AT&T now,
experimenting with T-Mobile). I signed up for a monthly pay-as-you-go plan
with added unlimited data, and I can cancel it any time if I want to. When
I'm ready to transition they will port my AT&T number over and I'll keep this
account.
I think part of your problem may be that you're using the wrong APN. On
t-mobile, internet.voicestream.com or internet2.voicestream.com seem to be the
APN to use (depending upon your plan). I'm using internet2.
