I would first check

$ cat /etc/timezone
Europe/Warsaw

And set it to what I need if says something different

$ echo Europe/Warsaw > /etc/timezone

Something must recreate /etc/localtime during boot time (doing it by
hand is described in the message below).

If the problem comes back (I did not have this problem) you may look
